post em up! i enjoy seeing everyone's creations.

i never went to culinary school but i think it would be a great experience. i've always been more of a school of hard knocks guy myself. it would be fun to take some classes on pastries and desserts.

Lately my newest culinary project has been dry curing meats. This is my first sausage. This is a Saucisson Sec which is basically a Pork, Garlic and Black Pepper Sausage which was dry cured about three weeks.

When I get home I will get some pics of my curing chamber which, right now, has Tuscan Salami, Pancetta and Sopressata curing in it.

oh man that looks great repo! any type of smoked cheese is heaven....smoked foods in general are fantastic. i had a meal last year that featured smoked cherry tomatoes. never thought something like that would be so tasty.

Realising what a hypocrite I am, almost crying over a youtube film how they treat dogs in China, but not wanting to know how small the cages of the animals I put on my plate are, I took Vivek's advice and tried to make some vegetarian Indian food:



....and it didn't turn out half bad! Gonna experiment around with it some more, but I must say I'm pleasantly supprised.

looks good rudolph! vivek gives good advice and you are a smart man for taking it.


i made some turkey and egg sandwiches that i named "the hell special" long story behind the name of that one....
i was also showing a friend how get a meal together so i had to round it out with roasted potatoes and some curry spiced beans. big yum yum over here!

Dangit! For whatever reason I can't post picks. Had some leftover pizza dough, so I made bacon egg and cheese 'hot pocket' dragons with cinnamon and sugar tails. The kids LOVED them!

Looked more like rats though. Gonna have to work on that.

Husky, I have to use photobucket to get my pictures to post.

Alright, this will be a little out of the norm. My wife and I have been baby-stepping towards veganism for a while. I have been seeing all kinds of stuff on a vegan FB forum about how jackfruit can mimic pulled pork. We were at an Asian market and bought a jack fruit:



There are lots of little tiny fruit pods that you almost peel your way to like working with garlic. They have huge seeds in the middle. Here is what the fruit looks like:



I found out later that I should have used canned green jackfruit versus a ripe fruit. I seasoned it with salt, pepper, garlic, paprika, and BBQ sauce. You sautee first and then add the sauce. After it softens, you can take a fork and shred it to where it looks like pulled meat.



I served it on a sandwich with sliced onion and pickles (standard for Texas BBQ). I also made a side of mashed potato and cauliflower with a mushroom and rosemary gravy. It was good!! The fruit was a bit sweet. I only had a honey BBQ sauce which probably brought out the fruit's sweetness. Next time, we will use canned green fruit (not as sweet or yellow). An interesting out of the norm meal that was pretty good!

new toys! i needed to get a knife roll for the new job and lady hb went behind my back and got one for me. i didnt expect to get one with knives inside, but i will gladly take them!

Nice HB. We have a set of Henkels that we have had for at least 15 years and they are still going strong today and we use them a lot, especially on weekends.

Made this beuaty the other night. Its a chicken breast infused with a Lemon and white wine sauce. then while pan-searin that up i threw some black pepper, onion powder, and garlic salt in on top and dumped the rest of the sauce in over top. Juicy, sweet, savory, and overall delicious.

i was playing around with the new knives on friday. you know you are cool when you spend a friday night cutting supremes out of oranges! haha

i found some super huge grapes that i was able to slice into planks. turned out pretty cool.

I need to get my knife set, been lookin around, buddy of mine from work told me bout this japanese company called Global Knives said they are high quality and lower price, but if ya know any better ones would love to know. The veggies and meats wont cut themselves :lol:

when friends of mine get married i usually get them a wusthof chef knife/paring knife set. you can find that set for pretty cheap sometimes, between 70-90 dollars. i stopped by a kitchen outlet store outside of minneapolis once and found that set for $65!

it's weird though, sometimes just the chef knife is like $140 so i'm not sure how the set is cheaper but i won't ask any questions!

Recently I've been seeing commercials for the Calphalon self-sharpening knife set. Not cheap, but my question are if they are good, do the sharpeners really do a good job, or just a new gimmick?

eagle, i checked out a video on those self sharpening knives and it sounds like a gimmick to me. when we consider that "sharpening" will actually remove steel from the blade, then it wouldnt make sense to whittle down your blade every time you take it out and put it back into the block.

i think it'd be better to just get a good knife and hone the blade on a steel before you use it each time. honing straightens the blade and helps it to cut smoothly.

Thanksgiving is just around the corner. Ah, I have always make cranberry sauce for Thanksgiving for friends who comes over for dinner. I thanked my mom for teaching me, it was her recipe.

1 bag of cranberries
1 cup of sugar
Half cup of water
half cup of Brandy ( can use bourbon or whiskey of ur choice ) I usually use Brandy.

Boil it for 15 - 20 min. (u will need to keep stirring from time to time preventing burns at bottom of the pot). Use the lid on for moist.
Simmer it down to low or warm for another 20-30 min, keep stirring from time to time.
It will be ready when it's little mushy.

I usually eat it when it's warm at first then leftover chilled for the next day.
Warm or cold still taste so gooooood!

i decided it was time for me to get a good relationship with homemade pancakes started. i am not too well versed with using flour but have been practicing bit by bit over the last 3 or 4 years.

yesterday i made blueberry pancakes that i didnt get a photo of so be on the lookout for a good photo coming soon.

today i went with buttermilk pancakes and they turned out bloody fantastic! it's a very simple recipe that i looked up online, i tried it out and it works great. photos are proof :woohoo:


Wet Team:
2 eggs
4 TBSP butter, melted
1/2 tsp vanilla extract
2 cups buttermilk

Dry Team:
2 cups all purpose flour
2 TBSP white sugar
2 tsp baking powder
1 tsp baking soda
1 tsp table salt

Process:
combine the dry team in a large mixing bowl. i dumped them all into a mesh strainer and tapped it until it sifted through.

combine the wet team in a medium size mixing bowl. i used a fork to whip it all together

pour wet team into dry team and give a good mix for a few seconds to combine all ingredients. do not overmix.

let batter rest for 2 minutes while heating a pan over medium heat. i had my burner on about 4.5

spray pan with non stick spray and use 1/8th cup of batter per pancake. i did 2 at a time but there is no limit to the amount of cakes you can do at once with enough space and heat...

recipe will yield about 15 beauties.

They look good HB. IF you want a little more fluff what I do is separate the eggs whip the whites amost stiff fold in.
