Thanks HB, it was my pleasure. Its hard to describe its taste because it has a very distinct smell and savor unlike any other thing I have eaten but all I can say is its very delicious. If ever you visit Jamaica you should give this meal a try, you wont be disappointed. Mine came out a little crumpled because of travel but despite the tiny cosmetic interference, its taste came out perfect.
Thanks for creating this thread, looking forward to see some more of your awesome work.

that plate looks beautiful buck! my mouth is watering...

so i got involved with an appetizer challenge for work. we were given a list of ingredients and told to choose 3. there was some tough competition but the breast managed to pull off the win! one lady made these tiny cheesecakes that were savory instead of sweet. awesome!

anyway, i had to keep who was judging this thing in mind so i made something kind of simple. i chose jalapeno, cream cheese, and bacon as my 3 ingredients. i put some jalapenos (no seeds or spine), basil leaves, and olive oil in my food processor and made a puree. i passed that through a strainer until i had just jalapeno juice. i made a spread with the hot juice, cream cheese and sour cream. i made a light version for the competition and a heavy version for myself. the one i made for was pretty pure green.

simple wrap: turkey, dried beef, sandwich spread, sprouts, and bacon. yum!

so what the heck? rock the discotheque!

I am a slow recipe cooker, but I love grilling. I have not had chicken, beef, or pork in about 25 years, but fish is yummy. First are tuna steaks from Sam's ($15 for a bag 6-7 steaks)in an olive oil, teriyaki, lemon, pepper, and garlic marinade (only 30 minutes before grilling to keep citric acid from cooking steaks). Served up with some oven roasted beets and broccoli.

Next up lobsters split at the top with a "T" cut at the base of the tail marinaded in butter, garlic, and a little lemon. The tails are from Sam's (about $15 each!!! warm water from Nicaragua). Grill the meat side down then flip and baste.

i don't know if sam's club has ever had a better advertisement! lol

thanks for the contribution lawman! i am a big fan of fish and all seafood so this post is right up my alley. i've only made lobster once and it was february so i did it in the oven. having the grill char on it would probably be about 200% better.

stop by anytime sir, you just made me quite hungry.

oh, and p.s. can you mom guys put the squeeze on wig for me? he told me he had a good recipe for gazpacho that i am interested to see.

my job has been a real hell ride for the past 5 weeks. what a mess...it would be easier to cope with if it were a problem i created. being led into the abyss is unsettling, but i still found some time to enjoy cooking for fun with lady hb!

so on the menu last night we had scallops. i bought some frozen bay scallops and thawed and dried them thoroughly. then it was all pretty simple from there. i had purchased some decorative striped pasta a week or so ago. when i saw it in the store i thought to myself "yes, scallops will go well with that."

now isn't that lovely? the sauce is a reduction of white wine, lemon juice and heavy cream. lady hb did not mind at all that the recipe called for wine ;)

Well, I think it must be something else.
When I copy/paste a youtube link it shows as a https instead of a http thingy. furthermore it is a youtu.be instead of a youtube.com link. used to be no problem, but lately seems to be.

But thanks HB, You're the CHEF!

Soap box Alert!! Here is a warning to share to all healthy food lovers and it is being found in ORGANIC tomato products!!

The powers that be are using a road de-icer as a tomato preservative and I for one am extremely allergic to it!!

Calcium Chloride is poison but has been approved by the USFDA with an assumed to be tolerable allowable amount daily!!

en.wikipedia.org/wiki/Calcium_chloride

Calcium chloride is used in concrete mixes to help speed up the initial setting, but chloride ions lead to corrosion of steel rebar, so it should not be used in reinforced concrete.[22] The anhydrous form of calcium chloride may also be used for this purpose and can provide a measure of the moisture in concrete.[23].
Calcium chloride is included as an additive in plastics and in fire extinguishers, in wastewater treatment as a drainage aid, in blast furnaces as an additive to control scaffolding (clumping and adhesion of materials that prevent the furnace charge from descending), and in fabric softener as a thinner.
The exothermic dissolution of calcium chloride is used in self-heating cans and heating pads.
In the oil industry, calcium chloride is used to increase the density of solids-free brines. It is also used to provide inhibition of swelling clays in the water phase of invert emulsion drilling fluids.
Hazards
Calcium chloride can act as an irritant by desiccating moist skin. Solid calcium chloride dissolves exothermically, and burns can result in the mouth and esophagus if it is ingested. Ingestion of concentrated solutions or solid products may cause gastrointestinal irritation or ulceration.[24]
Other possible side effects of taking calcium chloride include:
• A chalky taste in the mouth
• Hot flashes
• Lowered blood pressure
• Loss of appetite
• Feeling sick (nausea)
• Being sick (vomiting)
• Constipation
• Stomach pain
• Feeling weak
• Mental disturbances
• Extreme thirst
• Passing a large amount of urine
• Bone pain
• Kidney stones
• Irregular heart beat
• Coma
Calcium chloride salts also tend to contain a small amount of metals, especially aluminium. Over time these metals can accumulate in the body and have a toxic effect.

OK, end of soapbox alert!! thanks for reading!!
