Hmm, I don't really have pictures or anything, but I can try to describe what I do in the game to avoid getting shot.
Most enemy encounters in Dogfight begin head on, when both factions are flying from thier base to the other. They bump onto each other halfway. From there, you have a choice on how to fight/evade.
Many people choose to start shooting head-on, especially from far distances when you have just spotted each other. This is commonly known as "sniping". Some pilots are very good at this, I've been shot down by a skilled sniper which I had spotted only seconds before.
Though it is deadly, sniping is probably not very effective. Unless you are very skilled at aim, you probably will just end up wasting ammo.
Another choice is to wait until you get closer before you start shooting. Similar to sniping, except you are closer.
Personally, I suck at both of these. I am a dogfighter, up close and personal. When I encounter an enemy, I rarely try to start shooting head-on. Instead, I focus on evading the incoming bullets so I can get close enough to dogfight.
You may be surprised, but I've found the barrel roll to be very effective in dodging bullets. Especially if the roll is wide, becuase then not only are you moving up and down, but side to side, making a difficult target.
There is another manuver I use to evade head-ons that I find effective. I perform a barrel roll, but when I turn downwards, I dive towards the ground, gaining speed of which the momentum can be used for other manuvers. Just think of it is a barrel roll-dive.
Both of these are also useful when dodging bullets to bomb a target. But, there is one tactic that can be used, and is very effective. Caution: only for VERY patient pilots.
Its called dive-bombing. Right on takeoff, you pull your plane to a very high altitude. 1000 ft is the minimum, but higher is better. As you fly to the target, you are so high up that none if your enemies know you are there as you fly above them. Once you arrive, you dive down to your target, picking up plenty of speed which would make you difficult to shoot.
Of course, this tactic had its downsides. The main one is that it takes FOREVER. With the time it takes to do a single dive-bomb, one could perform two regular bombing runs. Also, there is always a chance that you will get shot down when you dive. When that happens, you get totally PO'ed becuase you wasted all that time.
