I had suggested:
Xxx Instructor xxX (coach, trainer, bodhisattva...whatever)
as a squad tag because it would be instantly recognizable and comunicates the intent. There will be very few squad tags in the lower ranks so it will really stand out. An easy to find squad thread on the forum could let them read what it's all about. The first page of the thread should list the squads intent, maybe list the voulenteer's names and their vet name, rank and squad too. It could also be a real introduction including suggestions for practice and etiquette.
I like your idea that the instrutor squad should be "squad neutral" and not actively recruit. There may still be other vets who are not part of the instructor squad who can recruit if the want to. Definately start them out with a recruit status.
I suggest more of an observer/demonstrator role. You'll be certian to encounter hotshots who want to take a shot at you and they can learn the hard way.

I don't think noob planes will do much to level the field between the veterans and the noobs, but we'll see. Also remember that if you fight you will level out fairly quickly. You might want to save it for tank campers and spawn killers who need an old school lesson.
