It takes a moment to speed up, yes, but the same would be true in real life. A car takes time to accelerate. So does a plane. If you mean it doesn't even start for a few seconds, that's just a personal problem (meaning only you experience it). I use my throttle in turns, and it's very responsive. See you in the skies!
